Get Inspiralized This Year

It is time to ditch the pasta and make 2016 your year to eat healthier, and not just for three weeks but all the time. Make eating healthy fun and get “inspiralized” with a few of these insanely easy recipes featuring the spiralizer machine, which can be found at any kitchen supply store, such as Crate and Barrel, Target or Ikea. All you have to do is spiralize some vegetables and put them into a bowl. No baking or exuberant amount of prep time is required. Try some of these versatile, low carbohydrate yet filling meals that take under five steps to prepare.
Recipe 1: Avocado Basil Zucchini Noodles (Feel free to add a protein source)
Ingredients:
- spiralized zucchinis
- 5 tsp. lime
- salt and pepper to taste
- 1 avocado (base for the sauce)
- 1/4 cup plain Greek yogurt
- 12 basil leaves
- 1 medium clove of garlic, minced
- 1 whole lime
- olive oil
Instructions:
- For the sauce, place all of the ingredients into a food processor and pulse until creamy. Add more or less seasoning to taste.
- Place your zucchini noodles into a bowl, pour sauce over your “zoodles” and mix to combine thoroughly.
- Add protein and other vegetables if you wish and enjoy.
Recipe 2: Carrot Pad Thai
Ingredients:
- spiralized carrots
- red cabbage
- bell peppers
- cilantro
- sesame oil
- sesame seeds to garnish
- soy sauce for added flavor
Instructions:
- Spiralize your carrots and sautee them in a bit of sesame oil on a frying pan for several minutes to give the carrots that “asian fusion” flavor. Add soy sauce to coconut aminos (optional).
- Top with the vegetables listed or any that you want. This is a diverse recipe, so you can take out or replace anything with greens of your choice
- Put in a bowl and enjoy. It is that easy.
Recipe 3: Quick Sweet and Spicy Cucumber Noodles
Ingredients:
- spiralized cucumbers
- cherry tomatoes
- greens of your choice (kale, spinach, etc.)
- a sweet and spicy vinaigrette sauce
Instructions:
- Spiralize your cucumber and place into a large bowl.
- Add greens and other vegetables.
- Add sweet and spicy vinaigrette and toss.
- Enjoy this super quick meal that will keep you full and refreshed.
